Tuscan-Style Grilled Tuna Steaks

4 fresh tuna steaks, 8 ounces each, 1-inch thick
1 lemon, zested
3 sprigs fresh rosemary, about 2 tablespoons leaves stripped from stem
Handful flat leaf parsley
3 cloves garlic, crushed
Coarse salt and black pepper or grill seasoning
Extra-virgin olive oil, for cooking

Rinse and pat tuna steaks dry. Place zest on top of cutting board. Pile rosemary and parsley leaves on top of zest. Pile garlic and some coarse salt and black pepper or grill seasoning on top of herbs. Finely chop the garlic, herbs, and spices. Drizzle the olive oil over the tuna steaks just enough to coat each side. Rub herb and garlic mixture into fish, coating pieces evenly on each side. Let stand 10 minutes.

Grill tuna steaks 6 minutes on each side or 4 minutes on each side, if you prefer pink tuna at the center. Cook steaks over: high setting on indoor electric grill, medium high heat on outdoor gas grill or, 6 inches from hot, prepared charcoal.

Totally F***ed Up

I watched “totally f***ked up,” the 1993 film by Gregg Araki. I really enjoyed his cinematographic perspective portraying a view of  gay teenage life in a Warholesque style with close intimate shots of the characters.

Mandarin orange salad

¼ cup vegetable oil
¼ cup vinegar
½ cup sliced almonds
½ red onion
2 mandarin oranges
1 head of lettuce

Preparation:  In a jar with a tight fitting lid, combine oil, vinegar,  salt and pepper to taste). Cover and shake well. Toast almonds if desired. Slice or chop red onion (as desired). Peel oranges and separate segments. In a large bowl toss lettuce, onions, oranges, and dressing until evenly coated. Probably dress with Paul Newman’s Dressing as well.

Shepard and Dark

Shepard and Dark previewed at the Toronto International Film Festival. It’s a film by Treva Wurmfeld about Sam Shepard, playwright,  and his friend Johnny Dark. It documents their friendship in letters through the years an their collaboration to  publish a book of the letters . I couldn’t find a trailer so I’ll play an interview that I found conducted by editor-in-chief Elliot Kotek for celeb.com.
